Crispy Melting Moments Recipe

Preheat an oven and keep it ready.
Lightly grease two baking trays.
Cream the butter or margarine with the sugar until very soft, light and fluffy.
Gradually add the egg, beating continuously.
Sift together the flour and salt, then work these dry ingredients into the creamed mixture to make a soft dough.
Divide the dough into 30, form each piece into a ball and roll in the crushed cornflakes.
Place the biscuits on the prepared baking trays, allowing room for them to spread.
To decorate, press half a glace cherry in the centre of each.
Bake the biscuits in a moderate oven (180C, 350F, gas 4) for 20 minutes or until golden brown.
Remove the hot biscuits from the trays and transfer them to a wire rack to cool completely.
Variations Ginger melting moments: sift 1 teaspoon ground ginger with the flour and salt before mixing into the other ingredients.
Substitute small pieces of candied stem ginger for the halved glace cherries.
Oated melting moments: substitute 50 g/2 oz rolled oats for the crushed cornflakes.
