Melon Butter Recipe
Ingredients
| 1 cup coarsely chopped cantaloupe, papaya or peaches | ||
| Butter/Margarine | 1/2 Cup (16 tbs), softened | |
| Lime juice | 2 Tablespoon | |
| 1 teaspoon finely grated lime peel | ||
| Black pepper | 1/4 Teaspoon | |
Directions
In a small saucepan, simmer fruit until softened or microwave fruit in a small microwave-safe dish on HIGH (100% power) 3 minutes.
Cool to room temperature.
Place all ingredients in a blender or food processor; process until smooth.
