Melon and Mint Refresher Recipe
Ingredients
| Caster sugar | 3/4 Cup (16 tbs) | |
| Water | 5 Tablespoon | |
| Small bunch of mint | ||
| 1 large ripe melon | ||
| Grated rind and juice of 2 limes or lemons | ||
| Egg whites | 2 | |
| Mint sprigs to garnish | ||
Directions
Put the sugar and water in a pan and heat until dissolved, stirring.
Bring to the boil and simmer for about 10 minutes.
Add the mint and mix well.
Allow to cool.
Cut the melon flesh into chunks and puree in an electric blender.
Strain the mint flavoured syrup onto the melon and add the lime or lemon rind and juice.
Pour into a rigid freezerproof container, cover, seal and freeze for 2 to 3 hours, until half frozen but still soft in the centre.
Turn into a bowl and beat until smooth.
Whisk the egg whites until stiff, then fold into the melon mixture.
Return to the container, cover, seal and freeze until firm.
Transfer to the refrigerator 30 minutes before required, to soften slightly.
Scoop into chilled individual serving dishes and garnish with mint sprigs to serve.
