Melba Cake Recipe

Ingredients
16 ounces almond paste
4 eggs
Bread crumbs
1 tablespoon salad oil
2 packages frozen raspberries
1/2 can pears
Shredded almonds
1-2 pints vanilla ice cream
3 ounces rum
Directions
1. Grate the almond paste and place in a bowl. Add the eggs and stir the batter as smooth as possible. Pour into a round cake pan that has been sprinkled with bread crumbs.
2. Bake the cake in 300°F oven for about 45 minutes. Let the cake cool before it is carefully loosened and placed on a serving dish.
3. Heat 1 tablespoon salad oil in a frying pan over low heat and pour in the shredded almonds to brown, turning them often. Place the shredded almonds on paper towel.
4. Decoration: Mash one package thawed raspberries and spread over the cake. Cut the pears in wedges and arrange fan-shaped.
5. Sprinkle on the rest of the raspberries. Finally sprinkle on the roasted almonds.
The cake round can be baked several days before cake is to be served. It will keep well in the refrigerator if wrapped in plastic or foil.
