Mediterranean Medley Recipe
Ingredients
4 club rolls, each cut crosswise into 4 slices
1/3 cup bottled garlic salad dressing Bibb lettuce
1 container (1 pound) prepared macaroni salad
2 hard cooked eggs, shelled and sliced
1 small cucumber, pared and sliced
1/2 cup olive salad (from a 12 ounce jar)
2 cans (5 ounces each) deveined shrimps, drained and rinsed
4 rolled anchovies (from a 2 ounce can)
Potato chips
Directions
Place slices from 1 roll on each of 4 serving plates; drizzle with salad dressing; top with lettuce, then macaroni salad, spreading into an even layer to cover rolls.
Top macaroni with layers of sliced egg and cucumber, olive salad and shrimps; garnish with an anchovy.
Serve with potato chips and additional salad dressing for everyone to sprinkle over top, if you wish.
