Ingredients

 
* 2 6 oz fillets of cod
 
* 2 tbsp chopped kalamata olives
 
* 2 tbsp chopped green olives
 
* 2 handfuls of green beans (about 4 oz.), trimmed
 
* 1 clove of garlic, chopped
 
* 3/4 cup of cherry tomatoes, halved
 
* 1 tsp of lemon zest
 
* 1/2 a lemon, sliced
 
* 1/4 cup chopped parsley
 
* A little extra virgin olive oil
 
* Salt and pepper to taste
 
* Anchovies – 4, minced (optional)

Directions

Preheat oven to 400.
1. Combine olives, garlic, tomatoes, lemon zest, anchovies (if used) and parsley in a small bowl. Drizzle with a teaspoon of extra virgin olive and season with salt and pepper.

2. Lay out 2 pieces of foil. Place a single layer of green beans on the bottom. Top with ½ of the tomato mixture followed by the cod fillet.

3. Drizzle cod with a tsp of olive oil and season with salt and pepper. Top each fillet with 2 slices of lemon.

4. Pull sides of foil up and fold over to seal. Pull sides in and seal as well. Pop in the oven for 25-30 minutes or until cod is cooked thru.
