Ingredients

 
2 cups dried navy beans or Great Northern beans, sorted
 
8 cloves garlic, peeled
 
4 teaspoons olive oil (optional)
 
Juice and grated rind of 4 lemons
 
1/4 teaspoon salt
 
Fresh oregano leaves (garnish)

Directions

1. Place the beans in a large pot, add 8 cups of water, and soak for at least 4 hours. Drain off the water, and add 4 cups of fresh water and the whole garlic cloves. Cover and simmer over low heat for 1 1/2 hours, or until the beans are very tender and all of the liquid has been absorbed. (Periodically check the pot during cooking, and add more water if needed.)
2. Allow the beans to cool slightly, and place in a food processor or blender with all of the remaining ingredients except the oregano leaves. Process until smooth.
