Ingredients

 Water1 1/2 Cup (16 tbs) (FOR THE COUSCOUS:)
 Salt – a pinch
 Olive oil1 Teaspoon (FOR THE COUSCOUS:)
 Instant couscous - 1 cup, medium-grain
 Fresh flat-leaf parsley - 2 tablespoons, minced
 Steaks4 Ounce (FOR THE STEAKS:)
 Salt To Taste (FOR THE STEAKS:)
 Cayenne – a pinch
 Canned anchovy filets packed in oil - 20
 Pimento-stuffed green olives- 10
 Watercress sprig8 (FOR THE STEAK GARNISH:)

Directions

GETTING READY
1. Prepare the grill.
2. Season steaks with salt and cayenne.
3. Cut each pimento-stuffed olive into 4 slices.

MAKING
4. In a saucepan, place water and salt and bring to a boil.
5. Add the oil and couscous; stir once and remove the pan from the heat.
6. Cover the pan with a lid and let stand for 10 minutes to allow the couscous to absorb the liquid.
7. On the hot grill, place the steak and grill for 4 to 5 minutes per side for medium-rare or about 6 minutes per side for medium.

SERVING
8. On warm serving plates, place grilled steaks.
9. On each steak place 5 anchovies in crisscross pattern on top of each steak.
10. In each plate, arrange 10 slices of olives inside each space created by the latticed anchovies.
11. Fluff the couscous with a fork and stir in the parsley.
12. Serve the couscous next to the steaks.
13. Garnish each serving with 3 black olives and 2 watercress sprigs if desired.
