Directions

MAKING
1. In a dish place the lettuce, over it place the fresh sliced fennel , red onion, black pitted kalamata olives , green olives, smoked tofu , cannelloni beans , corn, grape tomatoes, fresh parsley and just set it aside.
2. In a bowl, pour the olive oil, to that mix red wine vinegar, water and season with salt and pepper and give it a good mix until it’s all nicely emulsified.
3. Drizzle the vinaigrette on the salad.

4. This salad can be served as an appetizer or a quick snack in between meals when you are hungry.
