Ingredients
2 pkgs Spinach and Feta Ravioli
3 tbs (45 ml) olive oil
6 garlic cloves, minced
1 1/2 cups (355 ml) broccoli florets, blanched
1 1/2 cups (355 ml) cauliflower florets, blanched
1 cup (240 ml) cooked white beans
2 oz (60 g) sun-dried tomatoes, oil packed, julienned
2 bunches arugula leaves
1 tbs (15 ml) Romano cheese, grated black pepper, to taste
Directions
Cook ravioli according to package directions, lightly oil and chill.
In a large skillet heat olive oil.
Add garlic and cook over a medium heat until lightly toasted.
Add blanched broccoli, cauliflower, cooked white beans and sun-dried tomatoes.
Sauté 3-4 minutes.
Toss with cooked ravioli and arugula leaves.
Top with grated Romano cheese and fresh ground black pepper.
