Mediterranean Potato Pie Recipe

Ingredients
3 large potatoes, peeled and quartered
1 cup wholewheat pastry flour
1 tsp salt
1/2 tsp pepper
1/4 cup olive oil
3 Tbsp margarine
3 Tbsp wholewheat pastry flour
3 large, ripe tomatoes, chopped
1/2 green pepper, chopped
1 small onion, finely chopped
1 Tbsp raw sugar
1 tsp vegetable salt
1/2 bay leaf
2 cloves
1/2 lb Mozzarella cheese, diced
1/4 cup Parmesan cheese, grated
1 Tbsp fresh oregano or 1 tsp dried oregano
Directions
Boil potatoes and mash until smooth.
Mix in flour and blend well; season with salt & pepper.
Press potato mixture in a 1/2 inch thick layer in the bottom of a greased shallow baking dish.
Spoon olive oil over top.
Melt margarine in a skillet and stir in flour.
Add tomatoes, green pepper, onions, sugar, salt, bay leaf, and cloves.
Simmer for 15 to 20 minutes.
Remove bay leaf and cloves.
Spoon tomato sauce over potato mixture.
Top pie with Mozzarella cheese and Parmesan cheese.
Sprinkle with oregano.
Bake in a 350 degree oven for 15 minutes or until top is lightly browned and bubbling.
