Mediterranean Pasta Salad Recipe
Ingredients
| Pasta bows - 175 grams | ||
| Onion | 1 | |
| Garlic | 1 Clove (5gm), crushed | |
| Courgettes | 2 | |
| Yellow pepper | 1 To taste | |
| Flat field mushrooms - 2, sliced | ||
| Olive oil | 3 Tablespoon | |
| Red pesto sauce - 2 teaspoons, from a har | ||
| Tomato ketchup | 1/2 Tablespoon | |
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
Directions
MAKING
1) Cook the pasta as per the instructions given on the packet.
2) In a frying pan, heat 2 tablespoons of the olive oil.
3) Fry the garlic and onion in the oil till golden.
4) Add the mushrooms and pepper to the pan and cook till tender.
5) Add the courgettes and fry for another 2 minutes.
6) Mix the tomato ketchup and pesto and stir well to coat the vegetables. Cook for another 2 minutes.
7) Add seasoning to taste.
8) Drain the cooked pasta and put back in the saucepan.
9) Add the remaining olive oil along with the vegetable mixture.
10) Toss the ingredients together and set aside to cool.
SERVING
11) Serve the salad at room temperature or slightly chilled on a bed of dark green salad leaves. Makes an excellent appetizer.
