Mediterranean Pasta Recipe
This mediterranean pasta is a herbed sausage pasta. Made with country sausage cooked with the flavor of onions and garlic, it also has zucchini slices in it. Herbed with basil and oregano, the mediterranean sausage pasta is finished with tomatoes and served hot and peppy!
Ingredients
1 roll (16 ounces) Country Sausage
2 medium onions, sliced thin
1 small clove garlic, minced
1 tablespoon olive oil
2 medium zucchini, sliced thin
1/2 teaspoon dried basil leaves
1/4 teaspoon dried oregano leaves
1/4 teaspoon salt
Dash ground black pepper
2 large tomatoes, seeded, cut into large pieces
Hot cooked thin spaghetti
Grated Parmesan cheese, optional
Directions
Break sausage into pieces and cook in large skillet over medium heat until lightly browned.
Drain and set aside.
Place onions, garlic and oil in same skillet.
Cook and stir over medium heat until onions are quite soft and lightly browned.
Add zucchini, basil, oregano, salt and pepper; cook 5 minutes more.
Add tomatoes; cover and simmer 10 minutes more, stirring occasionally.
