Mediterranean Orzo And Chicken Salad Recipe
Ingredients
| 2 1/2 cups cooked orzo cooked without salt or fat | ||
| Cooked chicken | 2 Cup (16 tbs), diced | |
| English cucumber | 1 1/2 Cup (16 tbs), peeled | |
| Cherry or grape tomatoes | 1 Cup (16 tbs), quartered | |
| Red onion | 1/2 Cup (16 tbs) | |
| Red bell pepper | 1/2 Cup (16 tbs), chopped | |
| Chopped | 1/3 Cup (16 tbs) | |
| 1/4 cup chopped kalamata or ripe olives | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
| Olive oil | 1 1/2 Tablespoon | |
| Black pepper | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Garlic | 2 Clove (5gm), minced | |
| 2 teaspoons bottled minced garlic | ||
| Feta cheese | 1/3 Cup (16 tbs), crumbled | |
Directions
1. Combine first 8 ingredients in a large bowl, and toss well.
2. Combine lemon juice and next 4 ingredients in a small bowl,- stir well with a whisk. Pour over orzo mixture,- add cheese, tossing gently to coat. Serve at room temperature, or cover and chill up to 2 days.
