Ingredients

 2 1/2 cups cooked orzo cooked without salt or fat
 Cooked chicken2 Cup (16 tbs), diced
 English cucumber1 1/2 Cup (16 tbs), peeled
 Cherry or grape tomatoes1 Cup (16 tbs), quartered
 Red onion1/2 Cup (16 tbs)
 Red bell pepper1/2 Cup (16 tbs), chopped
 Chopped1/3 Cup (16 tbs)
 1/4 cup chopped kalamata or ripe olives
 Lemon juice1/4 Cup (16 tbs)
 Olive oil1 1/2 Tablespoon
 Black pepper1/2 Teaspoon
 Salt1/4 Teaspoon
 Garlic2 Clove (5gm), minced
 2 teaspoons bottled minced garlic
 Feta cheese1/3 Cup (16 tbs), crumbled

Directions

1. Combine first 8 ingredients in a large bowl, and toss well.
2. Combine lemon juice and next 4 ingredients in a small bowl,- stir well with a whisk. Pour over orzo mixture,- add cheese, tossing gently to coat. Serve at room temperature, or cover and chill up to 2 days.
