Ingredients
| 2 tablespoons sun-dried tomatoes, packed without oil | ||
| Hot water | 2 Tablespoon | |
| Olive oil-flavored cooking spray | ||
| Red bell pepper | 1/4 Cup (16 tbs), chopped | |
| 2 tablespoons chopped green onions | ||
| Parsley | 2 Tablespoon, chopped | |
| Kalamata olives | 2 Tablespoon, chopped | |
| Water | 2 Tablespoon | |
| Red wine vinegar | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Cooked pasta | 1 Cup (16 tbs), uncooked | |
Directions
MAKING
1. In a bowl, mix together tomatoes and hot water, cover it and set aside for fifteen minutes or so
2. Drain all the water afterwards, chop the tomatoes and set aside
3. On a small nonstick skillet, apply a coat of cooking spray and heat it over medium flame
4. To the skillet, add green onions and bell pepper and saute until slightly tender
5. Add chopped totamoes, parsley, water, red wine vinegar salt and pepper and saute for another minute till thoroughly heated
SERVING
6. Turn the heat off, add orzo, toss once or twice and serve hot
