Medallions Of Pork Recipe
Medallions Of Pork is nothing but a toothsome mixture of rib chops covered in meat stock. I always serve the medallions drowned in delectable sauce as a dinner meal. Bring back your guests with this scrumptious Medallions Of Pork.
Ingredients
3 tablespoons butter
6 medallions of pork (rib chops, boned and tied) 1 1/2 inches thick
Juice of 1/2 lemon
1/2 cup chicken stock
1/2 teaspoon chopped fresh thyme
1/2 cup heavy cream
Salt and fresh pepper to taste
Directions
Melt butter in a skillet.
Saute the medallions until brown, about 3 minutes on each side.
Remove from pan.
Add the lemon juice, chicken stock, and thyme and boil 3 minutes.
Add the cream and bring to a boil.
Turn burner to medium.
When the mixture coats a spoon (3 to 5 minutes), put back medallions.
Season with salt and pepper.
Cover.
Simmer for 20 minutes until tender.
Remove lid.
If there is too much sauce, reduce.
Remove strings from meat and pour sauce over medallions.
