Meaty Vegetable Soup Recipe
Ingredients
| 1 recipe Choose a Bean Soup Mix | ||
| 1 pound smoked pork hocks or beef shank crosscuts | ||
| 1 16 ounce can tomatoes, cut up | ||
| Carrot | 1 Medium, chopped | |
Directions
Prepare Choose a Bean Soup Mix as directed through the soaking step.
To the soaked bean mixture add smoked pork hocks or beef shank crosscuts.
Bring to boiling; reduce heat.
Cover and simmer 1 hour for pork hocks or 1 1/2 hours for beef shank crosscuts.
Remove meat from pan.
When cool enough to handle, remove meat from bones and coarsely chop.
Discard bones.
Remove and discard bay leaf.
Return the chopped meat to pan.
Add undrained tomatoes and carrot.
Cover and simmer for 30 minutes more.
Season to taste with salt.
Ladle the soup into soup bowls.
If desired, tie a bone and bay leaves together for a garnish.
