Ingredients

FOR THE SOUP
1/3 cup olive oil or vegetable oil
3 ounces salt pork, blanched and cut into 1/2 inch
cubes 3 large onions, peeled and cut into 1/4 inch slices
2 medium parsnips, scraped and cut into 1/4 inch slices
3 medium zucchini, trimmed and cut into 1/4 inch slices
1 pound carrots, scraped and cut into 1/4 inch slices
3 medium stalks celery, trimmed and chopped
5 small turnips, peeled and diced
1 large potato, peeled and cut into 1/2 inch dice
1/2 head green cabbage, cored and shredded
2 large cloves garlic, peeled and slivered
2 cups cooked Great Northern beans (or substitute the canned variety)
1 28 ounce can crushed Italian tomatoes
1 bay leaf
1/4 cup finely chopped flat-leaf parsley or 1 1/2 tablespoons dried
Salt and freshly ground black pepper to taste
1 1/2 teaspoons dried thyme
6 cups beef stock
6 cups water
3/4 cup dried alphabet macaroni
FOR THE MEATBALLS
1 pound lean ground beef
1 1/2 tablespoons chopped flat leaf parsley
1/2 teaspoon salt, or to taste
Freshly ground black pepper
2 tablespoons vegetable oil

In a very large, heavy stockpot, heat the oil, stir in the salt pork and cook over medium heat for about minutes.
