 Beef1 pound
 Soft bread crumbs - 3 cups, (3 to 4 slices bread)
 Milk1/4 Cup (16 tbs)
 Egg1
 Salt3/4 Teaspoon
 Pepper1 Dash
 Shortening2 Tablespoon
 Sauerkraut -1 (27-ounce) can, drained
 Onion1/2 Cup (16 tbs)
 Salt1/2 Teaspoon
 Long-grain rice - 3/4 cup, uncooked
 Water1 1/2 Cup (16 tbs)
 Tomatoes - 1 (16-ounce) can, cut up

Directions

GETTING READY
1. In a medium bowl, mix together beef, bread crumbs, milk, egg, 3/4 teaspoon salt and pepper until well combined.
2. Shape mixture into 12 equal sized meatballs.

MAKING
3. In a large skillet, melt shortening and brown meatballs in it.
4. Remove meatballs and to the same skillet, add drained sauerkraut, chopped onion and 1/2 teaspoon salt; mix well.
5. Stir in uncooked rice and water.
6. Add browned meatballs and tomatoes.
7. Bring the mixture to boiling and then reduce heat to low; cover and simmer for about 30-35 minutes.

SERVING
8. Spoon Meatball Sauerkraut Skillet in a plate and serve.
