Meat Tikkas Recipe
This recipe of Meat Tikkas was picked up by me from a gourmet magazine, I twisted it a little bit to meet my taste here I am, sharing my version with you. Ingredients
1/2 kg boneless meat, cut into 2.5 cm squares
1 tbsp ginger paste
1 tbsp garlic paste
1 tbsp lime juice
Salt and chilli powder to taste
Sauce
100 gm roasted groundnuts
1 1/2 tbsp sesame seeds
1/2 cup thick tamarind juice
1/2 cup sugar or jaggery
1/2 tsp garam masala powder
1/2 tsp roasted and powdered cumin
1/2 tsp toasted and powdered coriander
Salt and chilli powder to taste
Directions
1 Apply ginger, garlic, lime juice and salt to the meat cubes. You may also add 1 tbsp raw papaya juice to tenderise the meat. Let stand for a couple of hours.
2 Grill in an oven, or cook in a tandoor or barbecue the tikkas, skewered, till tender and golden. Baste with a little ghee or oil.
3 Put in a serving dish; pour the sauce over the tikkas and serve hot.
Sauce: Grind together the groundnuts and sesame seeds. Mix with the remaining sauce ingredients and cook over a slow fire till thick.
