Meat Sauce Recipe
Ingredients
1 onion
1 clove garlic
2 tablespoons oil
1 carrot
1 1/2 lb chuck steak
1 chicken liver
1/4 lb fresh button mushrooms
1/4 cup all-purpose flour
8 oz canned tomatoes
1 1/4 cups beef stock
1/4 cup red wine
4 tablespoons concentrated tomato paste
1/2 teaspoon dried mixed herbs
salt and pepper
Directions
Chop the onion and garlic finely .
Heat the oil in a pan and cook the onion and garlic until soft and golden.
Chop the carrot finely .
Add to the onion and cook for 3 minutes.
Cut the steak and liver into pieces and chop finely .
Add to the pan and continue cooking until lightly browned.
Chop the mushrooms finely .
Add to the pan and cook for 2 minutes.
Drain off surplus fat from the pan.
Work in the flour and cook for 1 minute.
Drain the tomatoes and add the juice to the pan.
Remove the seeds, chop the flesh finely and add to the pan.
Stir in the remaining ingredients and bring to a boil.
Cover and simmer for 1 hour.
Serve with any pasta.
