Ingredients
1/2 pound boneless veal
1/2 pound boneless pork
1 medium onion, grated
3 tablespoons flour
1 1/2 cups club soda
1 egg
1 teaspoon salt
1/4 teaspoon pepper
6 tablespoons butter or vegetable oil
Directions
Have butcher grind meats together twice.
Grate onion, mix with meat.
Add flour, mix well.
An electric beater can be used.
Gradually add club soda, beat until meat is light.
Last, add beaten egg, salt, and pepper.
Cover bowl, refrigerate at least 1 hour, so that meat can be handled easily.
Shape meat into 4-inch rectangles, 1 inch thick.
Melt butter in large skillet, add meat patties a few at a time.
Cook each batch at least 6 to 8 minutes per side.
Since pork is in the mixture, meat must be cooked all the way through.
The finished patties will be brown on the outside, with no tinge of pink in the center.
