2 cupfuls cold chopped meat or fish
 
1 teaspoonful lemon juice (if fish)
 
1 cupful Thick White Sauce
 
1/2 teaspoonful lemon juice (if meat)
 
Salt, pepper
 
Minced parsley
 
Celery, salt to taste

Directions

Prepare meat or fish.
Have sauce very cold.
Mix very carefully with fish or meat and season.
Shape, crumb, egg, crumb again and fry at 390° F. until golden brown on all sides.
Makes about 12 croquettes.
