Meat Loaves Everyday Meat Loaf Recipe
Ingredients
2 beaten eggs
3/4 cup milk
1/2 cup fine dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons snipped parsley (optional)
1 teaspoon salt
1/2 teaspoon ground sage
1/8 teaspoon pepper
1 1/2 pounds ground beef
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard
Directions
In bowl combine eggs and milk.
Stir in bread crumbs, onion, parsley, salt, sage, and pepper.
Add ground beef; mix well.
Shape meat mixture into desired shape.
For an oblong meat loaf, pat meat mixture into an 8x4x2-inch loaf pan.
For a round meat loaf, shape meat mixture into an 8-inch round in a shallow baking pan.
For a ring-shaped loaf, pat meat mixture into a 5 1/2-cup ring mold; unmold into a shallow baking pan.
For muffin pan meat loaves, pat meat mixture into 18 muffin cups.
Bake meat loaf, uncovered, in a 350° oven (allow 1 1/4 hours for an oblong loaf; 50 minutes for a round loaf or ring shaped loaf; 20 minutes for muffin pan loaves).
Spoon off excess fat.
Combine catsup, brown sugar, and dry mustard; spread over meat loaf.
Return to oven; bake about 10 minutes more.
Microwave cooking directions:
Prepare meat mixture as directed above.
Pat mixture into a 5 1/2-cup ring mold.
Unmold into a 9- or 10 inch non metal pie plate.
(Do not use a loaf pan or muffin pan.)
Cover with waxed paper.
Cook in a counter top microwave oven on high power for 12 to 13 minutes or till meat is done; give dish a quarter turn every 3 minutes.
Spoon off excess fat.
Combine catsup, brown sugar, and mustard; spread over meat.
Let stand for 5 minutes.
Transfer meat loaf to serving platter.
