Meat Loaf Muffins Recipe
Ingredients
| 1/2 cup chopped green onions 125 mL | ||
| Lean ground beef | 1 Pound | |
| Egg | 1 | |
| Garlic | 1 Clove (5gm), minced | |
| Tomato Paste | 2 Tablespoon | |
| Dried oregano | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1 | |
Directions
Remove 1 tbsp (15 mL) onion; set aside.
In bowl, mix together remaining onion, beef, egg, garlic, tomato paste, oregano, salt, and pepper to taste.
Form into 4 balls and place into ungreased muffin cups; sprinkle with reserved onion.
Bake in 425°F (220°C) oven for 15 to 20 minutes or until no longer pink inside.
