Meat Balls Alla Romana Recipe
Ingredients
1/2 pound ground beef
1/2 pound ground fresh pork
1/2 pound ground veal
4 slices whole-wheat bread, trimmed of crusts
1/2 cup milk
1 medium onion, chopped
1/2 green pepper, chopped
1 clove garlic, finely minced
1 cup finely chopped parsley
Grated rind of half a lemon
2 eggs
1 teaspoon salt
1 teaspoon freshly ground black pepper
Pinch each of cloves and nutmeg
Salad or olive oil
2 bay leaves
Directions
Grind the meats together twice.
Soak the bread five minutes in the milk.
Place the meat in a mixing bowl and add all remaining ingredients except the oil and bay leaves.
Squeeze the bread and add it to the meat.
Mix well and let stand one hour or longer.
Preheat the oven to 450 degrees.
Shape the meat into twelve large balls.
Grease the bottom of a roasting pan with oil and add the bay leaves and meat balls.
Bake, uncovered, fifteen minutes.
Brush with additional oil and bake fifteen minutes longer.
