Ingredients

 All purpose flour1 Cup (16 tbs)
 Salt1 Teaspoon
 Eggs2
 Milk1 Cup (16 tbs)
 1/2 cup diced cooked ham, or other leftover cooked meat
 1/2 cup each of 2 leftover cooked vegetables, diced
 Butter/Margarine1/2 Cup (16 tbs)
 1 cup leftover or canned gravy

Directions

Sift flour and salt into bowl.
Break in eggs.
Add milk and mix all together with egg beater until batter is smooth and free of lumps.
Add ham and vegetables.
Melt 1 tablespoon butter in 9-inch skillet.
Pour in one fourth batter, to cover bottom.
When pancake is golden brown, flip over and cook other side.
Repeat for remaining 3 pancakes, keeping them warm in oven until ready to serve.
While preparing pancakes, heat gravy in saucepan.
Serve one pancake to each person, adding gravy as desired.
Makes 4 servings.
