|Diced cooked ham/Other leftover cooked meat||1⁄2 Cup (8 tbs), diced|
|Vegetables||1⁄2 Cup (8 tbs), diced|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Gravy||1 Cup (16 tbs) (Leftover Or Canned)|

Break in eggs.
Add milk and mix all together with egg beater until batter is smooth and free of lumps.
Add ham and vegetables.
Melt 1 tablespoon butter in 9-inch skillet.
Pour in one fourth batter, to cover bottom.
When pancake is golden brown, flip over and cook other side.
Repeat for remaining 3 pancakes, keeping them warm in oven until ready to serve.
While preparing pancakes, heat gravy in saucepan.
Serve one pancake to each person, adding gravy as desired.
Makes 4 servings.
