Ingredients

 1 medium-sized onion
 Ground beef2 Pound
 Whole2 Cup (16 tbs)
 Milk1/2 Cup (16 tbs)
 3 eggs Salt
 1 10-ounce package frozen chopped spinach, thawed

Directions

1. Mince onion; set aside 1 tablespoon. In large bowl, mix remaining minced onion with ground beef, bread crumbs, milk, 2 eggs, and 1 1/2 teaspoons salt.
2. On sheet of waxed paper, pat meat mixture into 14" by 8" rectangle; set aside.
3. Squeeze spinach dry. In same large bowl, mix spinach, 1/2 teaspoon salt, remaining egg, and reserved minced onion. Spread spinach mixture on meat rectangle.
4. From narrow end, roll meat mixture, jelly-roll fashion, lifting waxed paper and using long metal spatula to loosen meat from waxed paper. Place rolled loaf, seam side down, in shallow baking pan. Bake in 350°F. oven 1 1/4 hours. Let meat stand 15 minutes for easier slicing.
