2 cups lean ground beef
 
1/2 lb lean bacon, rind removed, and chopped
 
1 cup fresh breadcrumbs
 
1 onion, finely chopped
 
1 teaspoon dried parsley
 
1 teaspoon dry mustard
 
1 tablespoon tomato sauce
 
1 beef bouillon cube
 
Salt and pepper
 
2 teaspoons dried peppers
 
1 large egg
 
Parsley and red pepper to garnish
 
Browning glaze: tomato sauce mixed with 1 teaspoon yeast extract

Directions

1 Place beef and bacon in a bowl and work together to combine.
2 Add all remaining ingredients, except the egg, garnish and glaze, and stir well to combine.
3 Add the egg and mix. Press the mixture evenly into a 23 x 13 x 1 Ocm/9 x 5 x 4 inch loaf tin (non metallic).
4 Microwave on power 7 for 12 minutes, and turn twice during cooking. Stand, covered loosely with foil, for 5 minutes.
5 Turn out and brush glaze over surface to add colour. Garnish with parsley and red pepper.
