Classic Meat Filling Recipe
Ingredients
| Ground ham or prosciutto - 2/3 cup, cooked | ||
| Ground white meat of chicken - 1 cup, cooked | ||
| Ground veal | 1 Cup (16 tbs), cooked | |
| Egg yolks | 2 | |
| Salt | 1 1/2 Teaspoon | |
| Olive oil | 1 Tablespoon | |
| Parmesan cheese | 1 Tablespoon, grated | |
| Salt | 1 To taste | |
| Pepper | 1 To taste | |
Directions
MAKING
1) In a large bowl, combine all the ingredients together.
2) Blend the meat mixture thoroughly into a smooth paste.
3) Shape the meat mixture into olive sized balls.
SERVING
4) Use the Meat Filling as a filling in Ravioli or as required.
