Meat Curry Recipe
Ingredients
| 1 1/2 pounds beef or lamb, cubed | ||
| Yogurt | 1 1/2 Cup (16 tbs) | |
| Onion | 1 Medium, quartered | |
| 4 slivers garlic | ||
| Ginger | 1 4 Inch | |
| Paprika | 1/2 Teaspoon | |
| 1 dry red or green pepper to taste | ||
| Turmeric | 3/4 Teaspoon | |
| Coriander seeds | 1 Tablespoon | |
| Poppy seeds | 2 Tablespoon | |
| Cumin seeds | 1 Tablespoon | |
| Chili powder to taste | ||
| Cloves | 6 | |
| Cinnamon stick | 1 2 inch | |
| Coconut | 1 4 Inch | |
| Salt | To Taste | |
| Vegetable shortening | 1 Cup (16 tbs) | |
| Onion | 1 Large, thinly sliced | |
| 16 almonds, blanched and sliced | ||
| Saffron | 1/2 Teaspoon | |
| Milk | 1/4 Cup (16 tbs) | |
Directions
Combine meat and yogurt in skillet.
Cover.
Simmer until half cooked approximately 1/2 hour.
Place quartered onion, garlic, ginger, paprika, pepper, turmeric, coriander, poppy seeds, cumin, chili powder, cloves, cinnamon, coconut and salt in food chopper using fine blade or in high speed blender.
Grind to a paste.
Heat shortening in huge skillet.
Add sliced onion and spice paste.
Fry for 15 minutes, until onions are browned.
Stir constantly.
Add meat and fry lightly until meat is browned.
Add almonds.
Simmer meat until tender approximately 1/2 hour.
Crush saffron in milk.
Add to meat.
Cook 5 minutes more.
Cover.
