Meat And Potato Loaf Recipe
Ingredients
| 2 medium potatoes, peeled and cut up | ||
| Snipped parsley | 1 Tablespoon | |
| Dried thyme | 1/8 Teaspoon, crushed | |
| Dried marjoram | 1/8 Teaspoon, crushed | |
| Salt | To Taste | |
| Pepper | 1 | |
| Eggs | 2 , beaten | |
| Saltine crackers | 1/2 Cup (16 tbs), finley crushed | |
| Tomato sauce | 1/3 Cup (16 tbs) | |
| Onion | 1/4 Cup (16 tbs), finley chopped | |
| Green pepper | 2 Tablespoon, finely chopped | |
| Salt | 3/4 Teaspoon | |
| Ground beef | 1 1/2 Pound | |
| Catsup | 1/4 Cup (16 tbs) | |
| Dry mustard | 1/4 Teaspoon | |
Directions
Cook potatoes, covered, in boiling salted water about 20 minutes or till tender; drain, reserving liquid.
Mash potatoes, adding about 3 tablespoons of the reserved liquid to make a stiff consistency.
Stir in parsley, thyme, and marjoram.
Season to taste with salt and pepper; set the potatoes aside, In a large bowl stir together eggs, cracker crumbs, tomato sauce, onion, green pepper, and the 3/4 teaspoon salt.
Add beef; mix well, On waxed paper pat beef mixture into a 10x8-inch rectangle; spoon potato mixture lengthwise down center of beef mixture.
Fold sides over potato mixture; seal, Place loaf, seam side down, on 15 1/2 x 10 1/2 x 2 inch baking pan.
Remove paper.
Bake in a 350° oven 45 minutes or till done.
Heat together catsup and dry mustard; spoon over meat loaf.
If desired, garnish with endive.
