Ingredients

 
1 pound fresh okra
 
2 tablespoons olive oil
 
1 cup chopped onion
 
2 garlic cloves, minced
 
1 pound lamb or beef, cut into bite-sized pieces
 
1/2 pound tomatoes, peeled and coarsely chopped
 
1/4 to 1/2 cup water
 
2 tablespoons lemon juice
 
3 tablespoons chopped fresh parsley
 
1 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
Garnishes:
 
Black olives, thin lemon wedges

Directions

Wash okra well; cut off stems and gently rub dry.
Set aside.
Pour oil into a large heavy skillet and place over a medium-high heat.
When oil is hot, add onions and garlic.
Saute a few minutes until onions are translucent and garlic is lightly browned.
Remove onions and garlic from pan or push to the sides.
Add meat and brown well over high heat.
Lower heat, stir in the okra and tomatoes.
Simmer gently, 5 to 6 minutes, stirring frequently.
Pour in 1/4 cup water and all the lemon juice.
Mix in the parsley, salt, and pepper.
Cover and simmer 1 1/2 hours or more, until meat is tender, occasionally adding more water if stew is too thick or too dry.
Adjust the seasoning to taste.
