Ingredients

 
2 egg yolks
 
2 tsp (10 ml) Dijon mustard
 
1/2 tsp (2ml)salt
 
2 cups (500 ml) vegetable oil
 
2 tbsp (30 ml) wine vinegar
 
1/2 tsp (1 ml) pepper
 
1 tbsp (15 ml) boiling water
 
1 tsp (5 ml) honey (optional)

Directions

–  In a bowl, with a wire whisk, mix egg yolks, mustard and salt. Pour oil in thin trickles, beating constantly. Whenever the mixture appears too thick, add 1 tsp (5 ml) vinegar.
–  Finally, add pepper and boiling water and stir. Adjust seasoning
