Ingredients

 Egg yolks2
 Dijon Mustard1/4 Teaspoon
 Olive oil - 1 to 1 1/2 cups , approximately
 Lemon juice or wine vinegar - 1 tablespoon, approximately
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1.Place a mixing bowl on wet towel.
2.Into the bowl, add in egg yolks, mustard, and a pinch of salt and pepper .
3. Beat with a wooden spoon or whisk.
4.Add 2 tablespoons of oil, one drop at a time. Whisk well.
5. When oil begins to get absorbed, add remaining oil and stir.
6.Ensure all oil is absorbed before adding more.
7.Add in lemon juice or vinegar to thin the ixture.
8. Correct the seasonings by adding some more salt, pepper and lemon juice or vinegar.

SERVING
9.Serve with salads and sandwiches.
