Mayberry Fruit Squares Recipe

| Mixed dried fruit/1/2 pound mixed dried fruit | 2 Cup (32 tbs) | |

| Boiling water | 1 Cup (16 tbs) | |
| Lemon rind | 1⁄2 Teaspoon | |
| Oat flakes | 1 1⁄2 Cup (24 tbs) | |
| Whole wheat pastry flour | 1 Cup (16 tbs) | |
| Unrefined oil | 1⁄2 Cup (8 tbs) | |
| Water | 3 Tablespoon |

Directions
Simmer 5 minutes.
Cool.
Meanwhile, mix the oat flakes, pastry flour, and salt.
Rub the oil in by hand until well mixed.
Sprinkle with water and mix lightly.
Press half the oat mixture into an 8 inch square pan.
Chop the fruit and spread over the crust.
Then sprinkle the rest of the oat mixture over the fruit and press lightly.
Bake 25 minutes at 350°.
Cool.
Cut into squares.
