Maui Fried Chicken Recipe
Ingredients
3 fryer chickens
1 cup flour
2 tsp. salt
3/4 tsp. black pepper
1 1/2 cups pineapple chunks
1 1/2 cups Coconut Milk
1/2 lb. butter or margarine
1/2 cup shredded coconut
Oil for frying
Directions
Cut fryers in half and dip in mixture of 1/2 cup flour, salt and pepper.
Heat oil in a deep skillet and fry chicken to a golden brown color.
Put chicken in baking pan and bake in oven at 350° F.till tender.
In a sauce pan, heat coconut milk but do not boil.
Mix butter and 1/2 cup flour in bowl.
Add coconut milk gradually and whip until smooth.
Add more coconut milk for desired thickness (not too thick).
In skillet, saute pineapple chunks in butter until lightly browned.
Place chicken on serving platter, sprinkle with fresh shredded coconut.
