Savory Mashed Potatoes Recipe

Ingredients
6 medium potatoes of even size peeled and quartered
1 tsp (5 mL) salt
1/4 cup (60 mL) water
1/2 cup (125 mL) sour cream
1/4 cup (60 mL) butter or margarine
1 tsp (5 mL) savory
4 green onions chopped fine or 3 tbsp (50 mL) fresh chives chopped
1/4 cup (60 mL) fresh parsley chopped fine
Directions
Wash potatoes under cold running water, peel and quarter.
Place in a dish with the salt and water.
Stir well.
Cover and microwave at HIGH 8 to 10 minutes.
Drain, mash, and add the remaining ingredients.
Stir vigorously until all is smooth and well blended.
Adjust seasoning.
Place in a microwave-safe dish.
Cover.
Keep at room temperature and warm, when ready to serve, 2 to 5 minutes at MEDIUM, depending on how cool the potatoes are.
