Mashed Potatoes Recipe

Ingredients
4 large potatoes, peeled and quartered
1/2 cup skim milk or evaporated skim milk
1/4 teaspoon black pepper
Natural butter substitute (optional)
Ground nutmeg (optional)
Directions
1. Place potatoes in a large, heavy pot. Cover with water. Boil, covered, for 20 minutes or until tender.
2. Drain potatoes and mash with a potato masher or large fork.
3. Beat milk in with a wire whisk.
4. Sprinkle with pepper, and natural butter substitute and nutmeg, if desired.
Variation â– Substitute 1/2 cup nonfat buttermilk for the skim milk.
