Ingredients

 
1 lb (500 g) medium-sized parsnips
 
2 medium-sized potatoes (optional)
 
6 green onions, chopped fine or 1 small onion, chopped
 
1/4 cup (60 mL) water or chicken broth
 
1 tbsp (15 mL) flour
 
1/4 tsp (1 mL) savory or dill herb
 
Salt and pepper to taste
 
2 tbsp (30 mL) butter
 
2 tbsp (30 mL) cream or milk

Directions

Pare, wash and slice the parsnips, peel and slice the potatoes, if to be added.
Place in a microwave-safe dish the parsnips, potatoes, green onions or onion, water or chicken broth.
Microwave at HIGH 7 to 8 minutes, stirring once.
Drain, reserving the liquid.
Mash the vegetables.
Measure the cooking water.
Microwave at HIGH until liquid is reduced to about 1 tablespoon (15 mL).
Check a few times as it is cooking; it sometimes reduces very quickly.
Sprinkle the flour over the cooked parsnips and potatoes.
Add the savory or dill, salt and pepper.
Add the butter and milk or cream.
Beat until the whole is well mashed and creamy.
Adjust seasoning.
Place in a microwave-safe dish, cover.
Microwave at MEDIUM 5 to 6 minutes or until piping hot.
These can be prepared early in the morning and kept at room temperature until ready to serve.
Warm, covered, at MEDIUM 6 to 9 minutes or until piping hot.
