Ingredients

 3 cups mashed cooked parsnips
 Onion1 Tablespoon, finley chopped
 Parsley1 Tablespoon, finely chopped
 3/4 teaspoon salt, Pinch poultry seasoning
 Egg1 , Well beaten
 1/2 cup coarse bread crumbs
 1/2 cup fine bread crumbs
 2 tablespoons bacon drippings or salad oil

Directions

To parsnips, add onion, parsley and seasonings; stir in egg and coarse crumbs.
Shape into 8 patties, and roll in fine crumbs.
Heat drippings in frying pan, and saute until crisply brown on both sides.
