Mashed Parsnip Patties Recipe
Ingredients
| 3 cups mashed cooked parsnips | ||
| Onion | 1 Tablespoon, finley chopped | |
| Parsley | 1 Tablespoon, finely chopped | |
| 3/4 teaspoon salt, Pinch poultry seasoning | ||
| Egg | 1 , Well beaten | |
| 1/2 cup coarse bread crumbs | ||
| 1/2 cup fine bread crumbs | ||
| 2 tablespoons bacon drippings or salad oil | ||
Directions
To parsnips, add onion, parsley and seasonings; stir in egg and coarse crumbs.
Shape into 8 patties, and roll in fine crumbs.
Heat drippings in frying pan, and saute until crisply brown on both sides.
