Mashed Turnip Recipe
Ingredients
1 medium-sized turnip
1/2 tsp (2 mL) sugar
1/2 cup (125 mL) water
2 tbsp (30 mL) butter
1/4 tsp (1 mL) pepper
3 tbsp (50 mL) sour cream
Salt to taste
3 tbsp (50 mL) minced parsley
Directions
€¢ Peel the turnip as for Turnips Nature and slice thinly. Place in a microwave-safe dish with the sugar and water. Cover. Microwave at HIGH 12 to 14 minutes. Stir after 10 minutes and check the done-ness. When cooked, drain.
€¢ Add the remaining ingredients to the turnip. Mash and beat until creamy. Adjust pepper and salt.
€¢ Turnip can take quite a bit of pepper.
€¢ To reheat, microwave covered 3 minutes at MEDIUM.
