Directions
1. Cook the sweet potatoes for 20 minutes in lightly salted water. Drain.
2. Put the potatoes in the oven with the chicken and roast them until they are very tender.
3. Halve the potatoes, scoop out the flesh, and mash with a fork.
4. Melt the butter with the thyme in a small saucepan. Remove the thyme sprigs and reserve. Stir the melted butter into the mashed potatoes and season with salt and pepper and nutmeg. Garnish with the thyme sprigs.
