Mashed Potatoes And Cabbage Recipe
Mashed potatoes and cabbage is a mashed vegetable recipe. Cooked and seasoned, the two veggies are mashed along with milk for a creamy feel to it and can be served as a side.
Ingredients
4 medium size all purpose potatoes, peeled and cut into 2 inch cubes
1 small head cabbage, cored and sliced thin
1/3 cup skim milk
1/8 teaspoon black pepper
Directions
Preheat the oven to 400°F.
In a medium size heavy saucepan, bring 3 cups unsalted water to a boil; add the potatoes and cook, partially covered, over moderate heat until tender about 20 minutes.
Meanwhile, in another medium size heavy saucepan, bring 1 1/2 cups water to a boil; add the cabbage, cover, and cook over moderate heat for 8 minutes or until tender.
Uncover, raise the heat to high, and cook, stirring occasionally, until all the water has evaporated about 5 minutes.
Remove from the heat and set aside.
When the potatoes are cooked, drain and mash them.
Mix the cabbage, milk, and pepper into the potatoes, and spoon the mixture into an ungreased 9"x 9"x 2" baking pan.
Bake, uncovered, for 25 minutes.
Increase the oven temperature to broil, transfer the pan to the broiler, about 5 to 6 inches from the heat, and broil for 1 to 2 minutes or until browned.
