6 medium potatoes (about 2 pounds), pared
1/2 cup milk
1/4 cup (1/2 stick) butter or margarine
Salt and pepper to taste
Directions
1. Cook potatoes in a covered 1 1/2-quart glass casserole following directions in Fresh Vegetable Cooking Chart. Drain.
2. Heat milk in a 1-cup glass measuring cup in microwave oven until hot (15 to 30 seconds at High).
3. Mash or rice potatoes thoroughly. Whip in hot milk, butter, salt and pepper until fluffy.
