Mashed Idaho Potatoes Recipe
Ingredients
| Idaho potatoes | 8 | |
| Unsalted butter | 1/2 Cup (16 tbs) | |
| Milk | 3/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Ground pepper | 1 Teaspoon | |
| Chives | 1/4 Cup (16 tbs), chopped |
Directions
Cut the potatoes in half but do not peel.
Place the potatoes in a large saucepan with water to cover.
Bring to a boil and cook until tender, about 25 minutes.
Drain and gently pull off the skins.
Mash with a potato masher or put through a ricer.
Melt the butter in the milk and add to the hot potatoes 1/2 cup at a time.
Keep mashing until smooth and fluffy.
Stir in the chives and serve.
