Mashed Potato Pancakes Recipe
Ingredients
| Egg | 1 , Well beaten | |
| Potatoes | 2 Cup (16 tbs), mashed | |
| Onion | 1 Tablespoon, minced | |
| Salt | 1/2 Teaspoon | |
| Parsley | 1 Teaspoon, minced | |
| 3 tablespoons shortening, butter or margarine | ||
Directions
1. Blend the egg with the potato; then add the onion, salt and parsley.
2. Drop from a spoon into a frying pan containing sizzling hot fat. Brown each croquette or patty on one side, turn and brown on the other.
