Masala Vada Recipe

Ingredients
1). 1 cup channa dal
2). 4 tbsp finely chopped onions
3). 5-6 finely chopped curry leaves
4). 1 tsp finely chopped ginger
5). 2-3 finely chopped green chillies
6). 1 tsp chopped coconut pieces
7). 2 tbsp chopped cilantro
8). salt to taste
9). oil for deep frying
Directions
1. Soak channa dal for 2-3 hours.
2. Drain the water completely.
3. First grind 2 tbsp dal to a fine paste without adding water.
4. Now add the remaining dal and grind coarsely.(for 5-6 seconds)
5. Now take dal, onion, curry leaves, ginger, green chillies, coconut pieces and cilantro. Mix everything till its well blended.
6. Make medium sized dumplings, flatten and deep fry in hot oil. You can fry 5-6 vadas at a time.
7. Serve hot.

Thanks for the recipe. It was tasty....but the vada became hard within an hour even when the vadas were covered in a tupperware. What should I do to make it stay soft?

Hi Shama, you can add 1/2 tsp of baking soda while making the vadas. This will make them soft. I hv tried it.

Yes rumya...grinding few dals nicely will help you to bind the vada. It prevents breaking of the vada. You can also use for about 2 tbsp of besan instead of that.

Have you ever tried to bake vada? I am oing to do that and just spray with olive oil. I'll let you know how it works. I hate to deep fry-it is messy and fattening
