Ingredients

 
For dosa:
 
1/4 cup dehusked black gram
 
¾ cup rice
 
1 handful chana dal
 
1/4 tsp fenugreek seeds
 
Salt to taste
 
oil for frying
 
For bhaji/potato masala:
 
3 potatoes
 
2 med. sized onions, sliced
 
2 tomatoes, chopped
 
1/2 cup fresh or frozen green peas
 
coriander for garnishing
 
3 tbsp oil
 
1/2 tsp mustard seeds
 
1/2 tsp cumin seeds
 
1/2 tsp urad dal
 
few curry leaves
 
6 green chillies, slit lengthwise
 
1/2 tsp finely chopped ginger
 
1/2 tsp turmeric powder
 
salt to taste
 
1/4 tsp fenugreek seed

Directions

For dosa:

Soak urad dal, rice, chana dal and fenugreek seeds for 4 hours.
Then grind to a smooth paste. Let it ferment for about 12 hours.
Now add salt and mix well. If necessary add a bit of water to make it a medium thick batter.
Heat a pan and prepare dosa. Keep a tablespoon of bhaji/potato masala inside and fold.
Serve hot with coconut chutney and sambar.

For bhaji/potato masala:

Pressure cook potatoes and cut/mash them. Heat oil in a pan. Add mustard seeds. When they splutter add cumin seeds fenugreek seeds and urad dal, and saute till urad dal turns golden brown in colour. Now add the curry leaves and ginger and fry for a while. Add turmeric powder and mix it well. Add green chillies and chopped onions. Saute till the onions turns golden brown. Now add the chopped tomatoes and peas and saute until tomatoes and peas are cooked. Now add potatoes and 1/2 a cup of water. Add salt to taste. When it comes to a boil cover and cook it on a low flame for about 10 minutes.
Finally turn off the heat and garnish with chopped coriander.

oh... i would kill for a nice platter of masala dosa with coconut chutney!!! there is nothing more savory and comforting! n this recipe is awesome...coming from you, I trust it enough to make it...though it looks like a real tricky job to me... :) thanks for this
