Masala Pomfret Recipe
Ingredients
| 1/2 kg pomfret, cleaned and gashed for stuffing | ||
| Red chillies | 9 (For the marinade:) | |
| Pepper powder | 1/8 Teaspoon (For the marinade:) | |
| Cumin seeds | 1/8 Teaspoon (For the marinade:) | |
| Fenugreek seeds | 1/8 Teaspoon (For the marinade:) | |
| Mustard seeds | 1/8 Teaspoon (For the marinade:) | |
| Turmeric powder | 1/4 Teaspoon (For the marinade:) | |
| Garlic | 4 Clove (5gm) (For the marinade:) | |
| Ginger | 1/2 inch (For the marinade:) | |
| 5 button onions | ||
| Salt | To Taste (For the marinade:) | |
| 1 dsp lime juice | ||
| 2 dsp refined vegetable oil | ||
| Onion | 1 Cup (16 tbs), sliced (For the stuffing:) | |
| Green chillies | 1/4 Cup (16 tbs), chopped (For the stuffing:) | |
| Ginger | 1/2 Teaspoon, chopped (For the stuffing:) | |
| 2 dsp tomato, chopped | ||
| Salt | To Taste (For the stuffing:) | |
| Sugar | 1/8 Teaspoon (For the stuffing:) | |
| White of one egg | ||
| Refined vegetable oil for frying | ||
Directions
1. Grind the ingredients for the marinade.
2. Rub 2 dsp marinade evenly all over the fish and keep covered in a cool place for 2-3 hours.
3. Heat oil in a pan and fry onions, green chillies and ginger; fry till the onions are light brown in colour. Add tomatoes and saute until dry.
4. Add salt and sugar and mix well. Stuff the fish with this mixture. Seal the opening with beaten egg-white.
5. Heat oil in a skillet and fry the fish on both sides over low heat.
